COZY RECIPES #1 - QUICHE

Easy, Fast but still Tasty - in one of our last posts, we promised to give you some examples of our favorite EFT-recipes, so that you can enjoy fresh and healthy food without bothering too much. Here you go with the first one...

Quiche is a traditional French dish, usually made with diced ham and eggs. Our version is a bit fancyer and more vegetarian. In the end, you can basically put anything on a quiche, depending on your personal taste. Important is to take the right dough and to put an egg milk mixture in the end, otherwise it's not a "Quiche" but a "Tarte" - French people are quite picky when it comes to food.
Let's start with the main ingredients (remember: EFT-recipes never have more than 5):
puff pastry (ideally in a round shape)
250g creamed spinach
100g feta cheese (or goat cheese, just as you wish)
2 eggs
creme fraiche and / or milk
Put the creamed spinach in the microwave to defrost (about 7 minutes). Use the time to give the dough into the quiche dish (preferably with baking paper - means less dishes to clean afterwards) and pierce small holes with a fork. Then, take a small bowl and mix the two eggs with one tablespoon of creme fraiche (milk does it just as good). Make sure to stir thoroughly to obtain a foamy mixture. You can add some salt, pepper and nutmeg to the blend as well as to the spinach as soon as it's thawed.
You can now give the spinach on the dough, cut and spread the feta cheese and pour the egg mixture over your masterpiece. Add a little bit of grated cheese on top if you like and put it in the preheated oven (180°C) for about 20 minutes. Quick and easy, but nevertheless an absolute taste sensation. All that's left to say now is enjoy your meal, or as a French person would say: "Bon appétit"!
The Chef's Secrets
If you have some mustard in your fridge, spread a thin layer on the dough before putting the spinach on top - you won't regret it!
A really good and tasty supplement are mushrooms! Take 2 big fellas, cut them and give them on the spinach before pouring the egg mixture.
