COZY RECIPES #2 - SALAD

You are looking for something fresh and easy for a warm summer day, as a contribution to a buffet or for the small hunger between meals? In this article, we would like to introduce you to our favorite salads which have accompanied us through our childhood and still bring us lots of (culinary) pleasure today...

Salad is the ideal choice if you want something light and healthy. And: There are virtually no taboos! Just take a look into your fridge and let its content inspire your colorful and tasty meal. Whether it is for lunch in the office the next day, as a side dish for a multi-course menu or to nibble in between - it's quick and easy to prepare and there is an endless number of compositions and tastes. Here are our two favorite versions:
The "Key Salad"
Simple yet incredibly tasty, this salad is mandatory whenever my dad (or anyone else) starts the grill. Believe it or not, but it looks so good that even a friend of ours who is lactose intolerant couldn't resist. She paid the price the next morning, but she assured me that she had absolutely no regrets!
Simply mix those 5 main ingredients together, add a bit of love (or maybe rather a herb dressing) and a head of iceberg lettuce and you're good to go:
3 big tomatos
1 cucumber
1 package of feta cheese
a small can of corn
a small can of kidney beans
Let's call it "Exotic Explosion"
This fancy mix is a firework of flavors, refreshing and healthy at the same time. For the dressing, you can mix about three tablespoons of olive oil with the juice of one lemon and some pepper. Light and absolutely genious! If you go for the grapefruit, make sure to peel off the skin of the pieces before adding them to the salad. This takes a little effort but it's definitely worth it.
400g salad mix
150g cooked and pealed shrimps
1 avocado
1 grapefruit or orange
1/2 can of pineapples
